We started Daphnis and Chloe in a small Athens workshop in 2013. Throughout the years, we’ve traveled to the far reaches of Greece in search of these heirloom varieties—terroir affects the aroma and flavor significantly, so we always try to go to where these herbs spontaneously grow and use as little intervention as possible.
